Convection ovens bake or roast food as much as 35% faster than conventional ovens. Fans circulate warmed air around the cooking cavity, removing cold zones from around the food. The more efficient heat transfer penertrates the foods' surface quicker. Professional Chefs like convection ovens because they can cook several different foods types, in less time and space, than conventional ovens.
There are two different types of convecion ovens Countertop models and Floor models .
Countertop Convection Ovens

Floor Model Convection Ovens
• Available in both gas and electric
• Full size models accept standard sheet pans (18" x 26" x 1")
• Half size models accept half size sheet pans (18" x 13" x 1")
• Bakery depth models hold standard pans lengthwise for even better airflow around sides of oven cavity

Good to Know: Convection ovens come in two door types dependant and independant. Dependant door models cause both doors to open at the same time. Independant model doors open separately.
